Restaurant inspections

Recently released inspection reports of Lucas County food-service operations.

Violations:

Nick & Jimmy’s Bar and Grill, 4956 Monroe, Toledo, inspected June 15. Eggs are 46 degrees and cooked while hash browns are 58 and 82 degrees at time of inspection. All TCS foods must be held cold at 41 degrees or lower at all times to inhibit the growth of harmful bacteria. Hold these foods cold under refrigeration or well-iced so that they maintain 41 degrees or less at all times. Inspector: Kelly Sattler.

Walt Churchill’s Market, 3320 Briarfield, Maumee, inspected June 26. Foods made in the work kitchen and put out for retail sale are mislabeled at time of inspection. All food products put out for retail sale must have the full ingredient statements in place. Label must also include the allergen statements. The fruit pizzas made in produce and put out for retail sale are mislabeled at the time of inspection. The cream ingredients are missing from the label. All food products put out for retail sale must have the full ingredient statements. The deli sandwiches made in the deli and put out for retail sale are mislabeled at the time of inspection. Jerky found that is produced-smoked and cured in-house with a 20-day shelf life. You may not smoke or cure any meats for preservation without seeking a variance from the state of Ohio. New Triton, 6915 West Central, Toledo, inspected June 28. The undercounter cooler at the time of inspection is holding at approximately 50 degrees. Adjust or repair the unit to properly hold temperature at all times. Inspector: Sara Becker.

Fallen Timbers, 2400 South Scott Road, Swanton, inspected June 27. The display cooler at the time of inspection is running warm. Foods are holding at 50 degrees. All potentially hazardous foods must be held cold at 41 degrees or less at all times to slow the growth of bacteria. Have the units serviced immediately. Inspector: Sara Becker.

Burger King, 4870 Monroe ,Toledo, inspected June 21. Egg foods are hot holding at 90 degrees in the lower hot holding compartment at time of inspection. All TCS foods must be held hot at 135 degrees or higher at all times to inhibit the growth of harmful bacteria. There is no sanitizer available in one of the wipe cloth buckets in the food prep area at time of inspection. Change out sanitizer as often as needed to maintain chlorine at 50-100ppm. Little Caesars, 4037 Talmadge, Toledo, inspected June 28. Foods held based on time in lieu of temperature must each be marked with the time the food was taken out of temperature control or the time the food expires. Foods held based on time in lieu of temperature may be held out for up to four hours and must then be discarded. Label each individual row on the rack and erase old time markings once the time is up. Caribou Coffee Company, 5001 Monroe, Toledo, inspected June 28. The two-door under-counter cooler is holding TCS foods at 43 degrees at time of inspection. All TCS foods must be held cold at 41 degrees or lower at all times to inhibit the growth of harmful bacteria. Adjust or repair this cooler as needed. Wet wiping towels must be stored in sanitizer when not in use to prevent bacteria growth on them. Observed wet wiping towels out on work surfaces at this time. Inspector: Kelly Sattler.

Sbarro, 5001 Monroe, Toledo, inspected June 28. The prop-top cooler is holding ham at 45 degrees, pepperoni at 43 degrees, and tomatoes at 47 degrees at time of inspection. All TCS foods must be held cold at 41 degrees or lower at all times. Adjust or repair this cooler as needed. Inspector: Kelly Sattler.

Jed’s, 1566 Reynolds, Maumee, inspected June 28. Observed pork thawing on counter in kitchen. To prevent the growth of potentially hazardous bacteria, thawing should be done ahead of time under refrigeration or in prep-sink under cold running water. Bar dish machine out of sanitizer at time of inspection. To properly sanitize glasses, chlorine must be dispensed at 50-100ppm. Empty jug of sanitizer was replaced at inspection. Charlie’s Coney Island, 1572 Spring Meadows, Holland, inspected June 28. Observed facility with no date marks on TCS foods. Inspector: Nicholas Kusina.

Parkway Sports Bar & Grill, 2550 Parkway, Maumee, inspected June 29. Wet wiping rag is sitting out on prop-top cutting surface. To prevent potential cross-contamination, store all wiping in sanitizer solution between uses. Inspector: Paul Bauman.

Burger King, 902 Phillips, Toledo, inspected June 23. Observed cheese slices sitting out at room temperature with no time marked on time stickers. Facility uses time in lieu of temperature and must accurately mark times on TCS foods. TCS foods are only allotted four hours and then must be discarded. Inspector: Kurt Susdorf.

Wendy’s, 3124 Monroe, Toledo, inspected June 23. Observed quat sanitizer dispenser pouring out quat sanitizer at 100 ppm. All dispensers need to dispense quat sanitizer at 200ppm to properly clean all food contact surfaces. Contact chemical company to adjust sanitizer to 200ppm. Inspector: Kurt Susdorf.
