"This is fairly simple to make and fairly quick, especially if you are short on time," says Joe Stechschulte. "Works well if we have leftover pasta or rice."
Colorful Primavera
2 tablespoons olive oil
4 peppers - 1 each green, red, yellow, orange - cut into strips
1 large sweet onion, sliced
2 stalks celery, chopped
1 large zucchini, sliced
1 large yellow squash, sliced
1 pint cherry tomatoes
seasoning (such as Mrs. Dash)
Parmesan cheese, for serving
Heat oil in a large skillet, then add peppers, onion, and celery; saute for a couple of minutes. Add zucchini and squash; cook until tender. Add tomatoes and seasoning.
Top with Parmesan.
