Teresa Stebbins says that this is "an easy hamburger curry." The recipe comes from Doris Janzen Longacre's More With Less cookbook which "I've had since I was first married. The cover is worn off and many of the pages have food stains!"
Pakistani Kima (Hamburger Curry)
3 tablespoons olive oil or broth
1 cup chopped onion
1 clove garlic, minced
1 pound ground beef (or turkey or vegetarian crumbles, to make it lighter)
1 teaspoon curry powder
1-1/2 teaspoons salt
dash each: pepper, cinnamon, ginger, turmeric
2 cups cooked tomatoes
2 potatoes, diced
2 cups frozen peas and/or green beans
Heat the oil in a large skillet and saute the onion and the garlic. Add the beef; brown well. Stir in the remaining ingredients; cover and simmer 25 minutes. Serve with rice.
