Dinner Tonight: Marinated Cucumber and Feta Sandwiches

A light, flavorful sandwich for a busy weeknight supper.

Marinated Cucumber and Feta Sandwiches

  • 4 Kirby or Persian cucumbers
  • 1 small red onion, thinly sliced
  • 1-2 tablespoons sugar
  • 1/4 cup red wine vinegar
  • Generous pinch of salt
  • 4 sandwich rolls, such as ciabatta
  • 8 ounces feta cheese

With a vegetable peeler, shave cucumbers into a medium bowl in long, thin strips. Toss the cucumbers with the onion, sugar, vinegar, and salt. Let stand so the flavors combine, at least 10 minutes.

Meanwhile, split the rolls. Cut the feta into four thick slices and place each on a roll. Squeeze excess liquid from the marinated cucumber, divide it and the onion among the rolls, and serve.

Yield: 4 servings.
