Dinner Tonight: Strawberry Spinach Salad

Strawberry Spinach Salad


  • 12 cups spinach, baby or bite-size
  • 2 cups sliced strawberries
  • 2 bunches sliced green onions
  • 1-2 cans mandarin oranges, drained
  • ¼ cup pine nuts or cook‘‍s choice

Orange Honey Dressing:

  • Scant ½ cup orange juice
  • ¼ cup honey
  • 2 tablespoons canola oil
  • 1 teaspoon Dijon mustard

Place the salad ingredients, except pine nuts, into a salad bowl. Shake or blend the dressing ingredients well, then pour dressing over the bowl of salad mixture. Sprinkle the nuts on top before serving.
