Quick and easy, these can be made in 12 minutes.

- 1/2 pound shredded mozzarella
- 1 small chopped tomato
- 1 seeded and chopped jalapeno
- 1/2 teaspoon Sriracha
- 1/4 cup chopped cilantro
- 1/4 cup minced red onion
- 1/4 cup mayonnaise
- salt and pepper
- 4 slices whole wheat toast
Mix mozzarella with tomato, jalapeno, Sriracha, cilantro, onion, and mayonnaise; season with salt and pepper. Spread onto toast and broil for 4 minutes, until the cheese melts.
Makes 4 toasts.
