Cuban Rice and Beans
In a skillet sprayed with cooking spray, cook onion for about 2 minutes. Add beans, cumin, garlic, salt and pepper. Cook rice in microwave for 90 seconds, then add to skillet mixture. Heat and mix through. Serve topped with salsa.
Yield: 3-4 servings.
