Recipe: Beignets

1 cup water

1 cup milk

1 large egg

3 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

2 teaspoons sugar

Pinch of nutmeg

4 to 6 cups vegetable oil

Confectioners sugar for sprinkling

Combine water, milk, and egg in a large mixing bowl and mix well. Add flour, baking powder, salt, sugar, and nutmeg, and mix until the batter is smooth.

Heat the oil in a large deep pot or deep-fryer to 360 degrees. Drop batter by spoonfuls into hot oil, a few at a time, and fry until they are golden brown, turning 2 to 3 times. Drain on paper towels and sprinkle with confectioners sugar.

Yield: 2 dozen
