Pimento Cheese
1 pound sharp cheddar cheese
1 small jar pimento
2 tablespoons mayonnaise
Using the blade of the food processor, process cheese until smooth. Add pimento and pulse a few seconds to mix. Then add mayonnaise and pulse a few seconds until mixed. Serve with crackers, cocktail bread, or as sandwich spread.
Yield: 1 cup or more
