Dinner Tonight: Horseradish Encrusted Halibut

When Gayle Campbell lived in Alaska, halibut was so plentiful it practically rained from the skies. We're exaggerating, of course, for the sake of an amusing image, but it is true (she writes) that at the end of the season she would take whatever halibut she had left and give it to the Anchorage Zoo to feed the bears. This recipe also goes well with grouper.

Horseradish Encrusted Halibut

2 pounds halibut

Salt and pepper

½ cup sour cream

½ cup mayonnaise

1 tablespoon chopped onions

1 teaspoon prepared horseradish

3 tablespoons melted butter

¾ cup seasoned bread crumbs

Pre-heat oven to 350e_SDgr. Arrange halibut in baking dish, season with salt and pepper. In a small bowl, mix together sour cream, mayonnaise, onion, and horseradish. Spread mixture over fish filets. In a small bowl, mix together melted butter and bread crumbs. Sprinkle bread crumbs over fish. Bake until fish is flaky, about 20 minutes.

Yield: 4 servings
