Dinner Tonight: Leftovers Casserole

If you have leftover beef, pork, or lamb and you don’t know what to do with it, you can always go the casserole route. Diane Schmidt submitted this recipe that she suggests pairing with rice, noodles, or mashed potatoes. “Adding sour cream and mushrooms can step it up also,” she said. The recipe came from a family cookbook that is more than 50 years old.

Leftovers Casserole

2 teaspoons oil

½ cup onion, thinly sliced

2 cups cooked meat (beef, pork, lamb), diced

1 can (10½-ounces) beef gravy or leftover gravy

1 (12-ounce) package of frozen vegetables

1 cup grated cheese

Preheat oven to 350°.

Put oil in a skillet over medium heat, add onions and sauté until soft, 3-5 minutes. Combine onions, meat, gravy, and vegetables, and put in a casserole dish. Top with cheese and bake for 35 minutes.
