Dinner Tonight: Magic Meatloaf

This magic meatloaf, so different and so new, was like any other, until I ate you. Barbara A. Bachar of Oregon submitted this recipe for magic meatloaf — it’s so easy and low in calories that it’s like magic — that she first encountered about 40 years ago. It’s cooked in a slow cooker, and that is how she got the recipe: it came with the slow cooker.

Magic Meatloaf

2 pounds ground turkey

2 eggs

⅔ cup quick oats

1 package dry onion soup mix

½ cup ketchup

Combine all ingredients and shape them into a loaf. Cook in a slow cooker for 8-10 hours on low power, or 4-6 hours on high.

Yield: 6-8 servings
