Dinner Tonight: Marian's Salmon

About the only thing that tastes better than salmon is salmon with a spicy-sweet glaze. And that is exactly what Freda Baum recommends for us today. The recipe came from her friend Marian, and it couldn’t be simpler. But it yields a dish Ms. Baum calls “restaurant fancy” in 20 minutes. She likes to serve it with garlicky sautéed spinach, but then again, as she notes, “I like garlicky sautéed spinach with everything but my Cheerios.”

Marian’s Salmon

1 tablespoon balsamic vinegar

1 tablespoon honey

1 tablespoon chili powder

1 (1-pound) fillet of salmon

Cook’s note: You can adapt the glaze for any size of salmon; just keep the proportion the same: equal parts of each ingredient. Three total tablespoons of the glaze will cover one pound of fish, so adjust the amounts accordingly.

Preheat oven to 350°.

Mix together the vinegar, honey, and chili powder, and spread evenly over the fish. Bake 15-20 minutes, until the fish flakes when tested with a fork.

Yield: 2-3 servings
