9/7/2013

It’s a cheeseburger and a casserole all in one! Charlotte Parker submitted this intriguing recipe that was originally created by Jenny Pennington of Colorado Springs, Colo., and which was featured on Justapinch.com.

“Cheeseburger” Casserole

6 slices bread

Butter

2 cups shredded cheese, divided

1 box macaroni and cheese

1 pound ground meat

1 tablespoon beef broth, canned

2-3 tablespoons Worcestershire sauce

1 teaspoon yellow mustard

3 teaspoons ketchup, plus more for top

½ teaspoon garlic powder

½ teaspoon onion powder

1 tablespoon seasoned salt (such as Lawry’s)

3 large pickles, chopped

½ small onion, minced

Preheat oven to 440°.

Butter slices of bread and place butter-side down in an ungreased baking dish. Sprinkle 1 cup of the shredded cheese over the bread.

Prepare the macaroni and cheese according to directions. Meanwhile, in a large skillet over medium-high heat, combine the ground meat, broth, Worcestershire sauce, mustard, ketchup, garlic powder, onion powder, and seasoned salt. Cook until the meat is brown and almost done.

Spread the macaroni and cheese over the bread and cheese, and top with the meat mixture. Sprinkle the remaining 1 cup of shredded cheese on top. Add pickles and onions on top of that, and squeeze ketchup in a zig-zag pattern on top of it all.

Bake for 20-25 minutes until the cheese is all melted and the meat is done.

Yield: 6-9 servings
