Some people do not care for oatmeal unless it has been disguised with plenty of other ingredients. Su Johnson sent in this recipe for Baked Oatmeal with so many ingredients in it that even the most inveterate oatmeal hater might try it. The recipe makes several servings, she writes, so for a quick breakfast you can cook a batch, divide it in individual small dishes, and microwave each serving in the morning.
2 cups old-fashioned oats
1 teaspoon almond extract
1 cup sliced almonds
1 large apple, unpeeled and grated
4 cups milk, see cook’s note
½ cup brown sugar
1 cup dried cherries
Cook’s note: Try 2 cups of almond milk and 2 cups of regular milk, or all almond milk.
Preheat oven to 400°. Coat a 3-quart dish or baking pan with cooking spray. In mixing bowl, combine all ingredients. Transfer to baking dish. Bake uncovered for 45 minutes. Serve hot.
Options: Add pears, raisins, dried cranberries, cinnamon, pecans, etc.
