Dinner Tonight: Cabbage and Noodles

Nothing says Eastern Europe like this no-doubt filling recipe for cabbage and noodles, submitted by Ann Champion. Sausage, noodles, cabbage, and cottage cheese, all in the same dish. It’s like the ultimate Polish meal. Or Lithuanian. Or Latvian. Or Hungarian. Somewhere like that.

Cabbage and Noodles

  • 8 ounces noodles
  • 1 (16-ounce package) sausage roll, medium
  • 2 cups cabbage, sliced into coarse shreds
  • 1 heaping teaspoon garlic powder
  • 2 teaspoons seasoned salt, or to taste
  • 8 ounces cottage cheese

Cook noodles according to directions on package. Set aside.

Lightly brown sausage in a large skillet over medium heat, breaking it up as you go. Drain off fat. Add chopped cabbage. Stir and cook until cabbage is wilted. (May be covered with tight fitting lid and cooked over lower heat, stirring occasionally, if desired. Add garlic powder, cooked noodles, and seasoned salt. Stir and heat through. Add cottage cheese. Stir and heat through. Serve.

Yield: 4 hearty servings
