Dinner Tonight: Sweet and Sour Cabbage

Kathy Queen says this is an “excellent side dish for pork, chicken, or turkey” and it is “best served with mashed potatoes.” Her family is Polish, and she serves this “with our Polish sausage at all the holidays. Easter is coming up.”

Sweet and Sour Cabbage

1 head cabbage, cored, thinly sliced

1 cup water (add more if needed)

1/2 cup cider vinegar

1/2 cup sugar

1 tablespoon bacon grease or oil

sald and pepper, to taste

1 teaspoon caraway seeds

1 medium onion, chopped

1-2 apples, quartered

In a large Dutch oven or heavy pot, add all ingredients except for apples. Bring to a boil; cover and simmer 15 minutes. Add the apples and simmer for another 15 minutes, until cabbage is tender. Taste, then adjust seasoning if needed.
