● Food in the prep top cooler was not being held at the proper temperature.

● A squeeze bottle of spicy mayo and crab mix was sitting out at room temperature.

● Sushi rice wasn't at the proper temperature and wasn't marked for time so staff knew when it met its four-hour time limit.

● Nacho cheese in the dispenser wasn't being held at the proper temperature.

● Refrigerated food items were not properly discarded at their expiration date.

● A food employee moved from dirty dishes to clean dishes without washing hands in between.

● Red sauce in the walk-in cooler was kept beyond the seven-day use by or discard date.

● Spatulas were not cleaned at the required frequency.

● The chlorine sanitizing solution wasn't at the required concentration.

● Employee touched bagels with bare hands.

● Spider webs were at the beverage pump station.

● One of the draw stems was unhooked from the sanitary box and left open to environment.

● Ice bins were not covered. A dirty item was on top of the ice.

● Ice maker was dirty at the drip edge and on other surfaces. A dirty ice scoop was resting on one spot.

●Hand-washing sink was being used for purposes other than hand washing.

● There was a build-up on the drip edge in the ice machine.

● Fries and other foods were not being held at the proper temperature.

● There was food residue build-up on the inside of the microwave.

● In use utensils are being cleaned and sanitized every shift instead of every four hours as required.

● There was an unlabeled chemical spray bottle.

River Diner, 2040 Ottawa River, inspected June 8.  

● Raw beef was stored above ready to eat food inside the prep cooler. Mashed potatoes were stored with raw meats inside the bottom of the prep cooler, ham was stored with raw ground meats inside the walk-in-cooler.

● Raw shell eggs were not maintained at the proper temperature inside the prep cooler.

● Cole slaw, roast beef, and rice were held past their discard date.
