Mixed Berry Baskets

1 10-ounce package frozen puff pastry shells

1/2 cup seedless raspberry jam

1 teaspoon lemon juice

3 cups berries (strawberries, raspberries, or blueberries)

Sweetened Whipped Cream (see recipe below)

Bake and cool pastry shells according to package directions. In medium saucepan over low heat, heat jam until melted, stirring constantly. Remove from heat. Stir in lemon juice and berries. Serve in pastry shells. Top with whipped cream.

Yield: 6 servings

Sweetened Whipped Cream

1/2 cup heavy or whipping cream

1 tablespoon unsifted confectioners' sugar

1/4 teaspoon vanilla extract

In small mixer bowl, beat cream, sugar, and vanilla until stiff peaks form.
