Gingered Carrots

64 baby carrots with tops

1/2 cup fresh ginger, julienned

1 tablespoon butter

1 to 2 cups water

In melted butter, sweat ginger one minute. Cover with just enough water to top carrots and simmer until tender. Strain and plate.

Yield: 16 servings
