All potentially hazardous food that is reheated for hot holding must reach 165 degrees or more and then held at 140 degrees or more. Label and date any potentially hazardous food the day it expires. Sleep Inn & Suites, 1761 Meijer, inspected March 17. Critical violations: Sausage gravy held without date marking. All potentially hazardous foods held over 24 hours must be dated with date of opening, preparation or thaw, and held for no more than seven days. Inspector: Kistler.

Avva's Kitchen, 7229 West Central, Sylvania Township, inspected March 17. Critical violations: Chicken on hot buffet was only 110 degrees. Hot food must be kept at 140 degrees or above. Rice pudding was 52 degrees, cold foods on buffet must be kept at 41 degrees or below. Use deep pans in ice to keep food cold on cold buffet. Prepared foods must be date-marked. Food shields must be used to protect foods on cold buffet. Food waste, cardboard boxes, and other garbage on the ground next to Dumpster. Inspector: James Herzberg.
