1 cups all-purpose fl our
cup soy fl our
1 cups sugar
1 teaspoons baking powder
teaspoon baking soda
1 teaspoon ground cinnamon
teaspoon salt
2/3 cup soy milk
1/3 soy oil
1 egg beaten
2 cups apples, unpeeled, cored, and
chopped
Streusel Topping:
cup fi rmly packed brown sugar
1 tablespoon all-purpose fl our
1 tablespoon soy margarine, melted
1 teaspoon cinnamon
cup walnuts
Preheat oven to 375 degrees. In medium bowl, combine
fl ours, sugar, baking powder, baking soda, cinnamon, and
salt; mixing well. In small bowl, beat milk, oil, and egg;
blending well. Add to dry ingredients; mixing until well
blended. Stir in apples. Spoon onto lightly greased, 9-inch
square pan.
Prepare Streusel Topping: In a small bowl, combine brown
sugar, fl our, margarine, and cinnamon. Stir in nuts; mixing
well. Sprinkle over batter. Bake 30 to 35 minutes or until
golden brown. Serve warm.
