Restaurant inspections

Recently released inspection reports of Lucas County food-service operations:

Cottage Inn Pizza, 5318 Heatherdowns, in-

spected Sept. 30. Violations: Provide hair restraints for all employees working in the kitchen. Provide scoopers with handles. Eliminate all solo cups used to draw bulk food items. Clean and maintain gaskets on 3-door preptop reach-in cooler next to hand sink. Properly thaw frozen potentially hazardous food. Upon inspection shaved beef ribeye was thawing on prep table. Proper methods to thaw: under running water in prep sink or in refrigeration unit. Replace gaskets on 3-door reach-in prep top cooler. Remove labels from all clean dishware. Provide correct sanitizer. Currently using Chlorine. However, bleach was scented. If using bleach it must be plain bleach and approved as a dishware sanitizer. Remove all jewelry from forearms and reduce excessive ring jewelry. A simple ring is fine. This will reduce physical contamination of food product and en-

sure easier way to clean hands. Reduces crevices for food and bacteria to get in

jewelry. Upon inspection two large unopened bags of chicken were found th

awing above a heat lamp. Corrective action as taken. Inspector: Kevin Halligan.

Milo's Food Market, 4508 Lewis, inspected Sept. 30. Violations: All food handlers must wear a proper hair restraint. A hat or hairnet is acceptable. Hair restraints must be worn while slicing, cutting, and processing of food. Wire shelving in small walk-in cooler are very rusty. Clean shelving, repair if needed. Observed a pair of shoes on salt bucket, cell phone and keys on work space. Keep all personal belongings separate from any food or food content surface. A three-bay sink is needed for wash, rinse, and sanitize of utensils and equipment. If no three bay sink is installed, a combination detergent sanitizer must be used in two bay sink. Clean and maintain walls in back room. All refrigerated, ready to eat foods must be date marked. Inspector: Kelly Sattler.

7-Eleven, 537 Woodville, inspected Sept. 30. Violations: Observed baby food out of date. You must check the discard date on baby food. Rotate stock. Do not place price sticker over discard dates. Do not place foil on your cooler shelves. Foil will not allow the air to flow correctly. Corrected at inspection. Observed beer & pop stored on the floor. All food, drinks, cups, etc., must be stored at least 6 inches off the floor at all times throughout the establishment. Observed frost build-up in the reach-in freezer. Make sure the cooler and freezer are draining and working correctly. Monitor temperature. Store your containers for hot days and nachos upside down to prevent the inside from contamination. Corrected. Store the spray bottles with the other chemicals away from food and utensils to prevent cross contamination. Inspector: Jennifer Gottschalk.

Schweizer Fruit Farm, 4114 Seaman, in-

spected Oct. 3. Violations: Observed potatoes, onions, sweet corn and squash stored on floor of back room and in retail area. Store all produce at least 6 inches off the floor to protect from contamination. Inspector: Jaclyn Kistler.

American Petroleum, 5001 Douglas, inspected Sept. 30. Violations: Store pop, juice, beer a minimum of six inches off the ground. Raw eggs are to be stored on bottom shelf in cooler to prevent a potential cross contamination with other foods. Remove food equipment which are no longer being utilized from your facility. Replace all damaged ceiling tiles in store room. Chemicals are to be stored separate and below food or food products. Inspector: Bruce Keiser.

Marcos Pizza, 5248 Monroe, inspected Sept. 30. Violations: Sanitizer in three-compartment sink registers 100 ppm. Sanitizer must register 200 ppm. Please increase to 200 ppm. Prep staff wearing bracelet and thumb ring. Food handlers may only wear plain wedding band.

Erie Food Market, 727 Galena, inspected Sept. 29. Violations: Observed chemical from GFS called Quat-San. This is a quat sanitizer not a detergent sanitizer. Supply a detergent sanitizer to use in a two-bay sink and supply a three-compartment sink with two train boards to properly wash, rinse and sanitize. Inspector: Jennifer Gottschalk.

Sunoco Food Market, 1855 Woodville, inspected Sept. 28. Violations: Observed boxes of hotdogs held without date marking. Date the box when opened and hold for no more than seven days. Store tongs in a clean container, wash container daily. Observed hot dog tongs stored on counter top. All wrapped multi-ingredient self-service items must be properly labeled. Facility must locate ingredient lists for self service donut bagel care. Remove all unused equipment from your facility. Inspector: Kistler.

Rohrs, 5226 Monroe, inspected Sept. 27. Violations: Discard date incorrect on seafood salad potentially hazardous food may be kept 7 days.

Ottawa Hills Shell, 4310 West Central, inspected Sept. 27. Violations: Pre-made sandwiches were found to be without date marks. Sandwiches were discarded. All prewrapped sandwiches must be date-marked when removed from freezer. Inspector: Jim Herzberg.

Sports Arena, stand No. 4, 1 Main, inspected Oct. 1. Violations: Unlabeled spray bottle observed. Label all spray bottles with chemical name. Provide a metal stem thermometer to check food temperature. Repair the keg cooler floor. Observed paint chipping. The surface must be smooth and cleanable. Inspector: Gottschalk.

Sports Arena, commissary, 1 Main, in-

spected Oct. 1. Violations: Remove items around the handsink. The handsink must be clear at all times. Thoroughly clean the floor and tables before use. Observed dirt under tables. Observed 2 missing floor tiles under table. Replace missing floor tiles. Observed vegetable shortening on the floor. Place all items at least six inches off the floor. Remove foil from shelf. The shelf is a cleanable smooth surface. Observed food stored on the floor in the walk-in and in the pop room. Store all food products at least six inches off the ground at all times. Clean the ceiling of the beer walk-in cooler. Once the kitchen has been cleaned make sure you keep the chemicals away from food and utensils. All bottles must be labeled. Keep outside area clean and clear. Discard items no longer in use. Make sure you date label all opened potentially hazardous food that will be be used within 24 hours. Inspector: Gottschalk.

Olive Garden, 1919 South Reynolds, inspected Sept. 30. Violations: Dishwashing employee must wash hands for 20 seconds or dip in sanitizer solution for 15 seconds at 100 ppm chlorine sanitizer before handling clean dishes. Inspector: Mike Brady.

Little El Camino, 2022 Woodville, inspected Sept. 30. Violations: Recaulk area between wall of dish room and dish machine. Dish machine must seal to wall. Thoroughly clean the wall behind the dish machine. Thoroughly clean walls in kitchen and in walk-in cooler. Replace or repair cove base molding in the dishroom behind machine, under prep sink, behind prep top cooler containing sour cream, under handsink. Repair doorway frame in dishroom. Current frame is bent and sticks out from wall. Observed ice scoop stored on top of ice machine. Store scoop in a clean container to protect ice from contamination. Keep all chemicals and soap stored separately from food in storage shed. Discontinue the practice of setting containers and food items on top of the garbage can. The garbage can is not an acceptable work space. Corrected at time of inspection. Observed opened drink mix stored at room temperature at waitress station. Drink mix clearly stated - keep refrigerated after opening. Store all drink mixes requiring refrigeration in cooler. Discarded three bottles of mix. Observed wiping buckets with no sanitizer in them in kitchen. Fill all wiping buckets from the quat dispensor or add bleach to water in bucket to prevent the growth of bacteria. Inspector: Kistler.

Wynn Elementary, 5224 Bayshore, Oregon, inspected Sept. 30. Observed four door cooler holding at 50 degrees. Contact maintenance to evaluate problem. Do not use the cooler. Observed pooled water on floor behind stove and counter. Maintenance was contacted to evaluate and fix leak. Inspector: Kistler.

Ottawa Park Golf Course, 1 Walden Park, inspected Sept. 30. Violations: Clean and sanitize inside of ice machine. Use quat sanitizer at 200 ppm to sanitize inside of unit, especially ice slide. Remove ice before cleaning and sanitizing. Date mark all refrigerated ready-to-eat potentially hazardous foods being held for longer than twenty four hours with date opened such as chicken salad or date taken from freezer for chili. Evidence of mouse droppings in dry storage room. Thoroughly clean and sanitize area control measures are in place. Monitor these measures. Remove all pallets from dry store room and provide shelving or dunnage racks which are 6 inches above the floor. Keep wet wipe cloths in sanitizer at 200 ppm when not in use. Waffle House, 2454 South Reynolds, inspected Sept. 30. Violations: All potentially hazardous food in hold holding must maintain 140 degrees or more. Grits at 127 degrees were voluntarily destroyed. Clean and maintain both steam wells. Upon inspection the basins were in need of a cleaning. Clean and sanitize the interior of the ice machine. Water mold was evident. Wash and sanitize prep sink before and after use. Clean vents on the ice machine. Inspector: Kevin Halligan.

The use by date is seven calendar days which includes the day food was prepared package was open or seal was broken when food is maintained cold at 41 degrees or below.
