2 ounces lean cured ham, diced

1 tablespoon vegetable oil

1/4 teaspoon whole dried oregano

1 onion, peeled and diced

1 green pepper, seeded and diced

3 sweet chili peppers, seeded, finely chopped

1/3 cup fresh cilantro, chopped

2 cloves garlic, peeled and chopped

In a small pan, brown cured ham rapidly. Reduce heat to low; add oil and oregano and mix. Add remaining ingredients. Saute 10 minutes, stirring occasionally.

Yield: 1 to 2 cups
