Recently released inspection reports of Lucas County food-service operations:

Cafe Marie, 3344 Secor, inspected Nov. 29. Critical violations: Salad placed in dirty single-service container. Utilize only food-grade containers; single-use containers are not to be reutilized. Salad was discarded. Provide good grade scoop with handle for all condiment containers at prep coolers. Replace chipped platter and damaged food containers. Clean storage racks of food debris. Remove not utilized place setting from table once patrons are seated to prevent potential contamination of clean utensils. Inspector: Bruce Heiser.

Lorraine Hotel Restaurant, 1123 Jefferson, inspected Nov. 28. Critical violations: Food handlers touching ready-to-eat foods with their hands. Always wear gloves when touching ready-to-eat foods. Repair or replace all cracked gaskets in cooler and ice machine. Observed no date marking on potentially hazardous ready to eat foods. Always date-mark all foods that are ready to eat and potentially hazardous. Thoroughly clean and sanitize bottom of lift-up freezer and prep cooler. Observed some debris on bottom. Observed food buildup on freezer door. Defrost freezer to prevent contamination. When cooling, always put food in shallow pan or use rapid chiller. Inspector: Julie Nye.

Toledo Hilton, 3100 Glendale, inspected Nov. 29. Critical violations: Salad prep top cooler at 49 degrees; must be at 45 degrees or less at all times to prevent bacterial growth. Replace rusty shelves in reach in cooler near steam table on cook line. Sanitzer solution must be in constant use. Inspector: Mike Brady.

Bangkok Kitchen, 582 Dussel, Maumee, inspected Nov. 30. Critical violations: Reuse of one-time use containers is prohibited. Provide commercial grade containers. Repair dish machine so it is dispensing 50 ppm of chlorine. Dish tank was not dispensing any readable sanitizer. Clean the ceiling vent on the cold air return. Clean and sanitize the entire interior of ice machine. Provide scoopers with handles for bulk food items. Inspector: Kevin Halligan.

Jeds BBQ and Brew, 2531 South Reynolds, inspected Nov. 30. Critical violations: Bar glass washer not sanitizing properly. Will be rechecked. Wash items in back room dishwasher until repaired. Dishwasher in kitchen not dispensing chlorine properly. Sink set up to sanitize until repaired. Inspector: Brady.
