U.S. Bistro, 5001 Monroe, inspected May 15. Turkey, salami and sliced cheese in the prep top cooler is holding at 45-48 degrees. All potentially hazardous foods must be held cold at 41 degrees or less. No date markings observed on refrigerated PHF. Mark foods when package is opened or when the food is prepared. Food may hold up to 7 days at 41 degrees or less. Large food grade container on wheels is very dirty at time of inspection. Thoroughly wash and sanitize inside and outside of container. Three-compartment sink is leaking water into a bucket on the floor. Repair plumbing so that this sink no longer leaks. Keep chlorine sanitizer in wipe cloth buckets at 50-100 ppm. Captain D's, 2060 West Laskey, inspected June 7. Critical violations: No hand soap present at hand washing sinks. Food employees shall clean their hands and arms prior to food preparation after working with raw foods, handling dirty dishes, change of stock, going to restroom, coughing, sneezing on hands or handling refuse. Food service was closed until hand soap was obtained. Food service manager required to have safe training in food safety. Observed rice in two door cooler that was 50-56 degrees after six hours of cooling. Potentially hazardous foods must be cooled from 135 degrees to 70 degrees within two hours and from 70 degrees to 41 degrees within four hours. Raw fish in single door cooler at 44-47 degrees. Adjust cooler to maintain potentially hazardous foods at 41 degrees or less. Shredded cheese, sour cream, butter and cole slaw found at 45 degrees. Raw fish being stored above pre-cooked chicken in walk-in cooler. Store raw fish below or separate from pre-cooked or ready-to-eat foods. Food probe thermometer with a temperature range of 0 to 220 degrees must be utilized to check and monitor food temperatures. Clean food residue from and sanitize door handles of coolers and interior of ice machine lid. Five non-critical violations. Inspector: Bruce Keiser.

IHOP, 6535 Airport, inspected June 7. Critical violations: Observed tongs dropped on the floor put back on the counter or cook line. All utensils dropped on the floor must go immediately to the dishroom. Observed beans at 86 degrees in steam table. All hot holding must be 135 degrees or above. Observed eggs and butter held in ice baths at 51-55 degrees. Ensure enough ice is used to maintain foods at 41 degrees or below. Six non-critical violations. Inspector: Jaclyn Kistler.

Jed's BBQ & Brew, 2531 Reynolds, inspected June 8. Critical violations: No sanitizer observed in bar glass washer. Container of iodine sanitizer empty. Sanitizer buckets found to be at 50 ppm, must be at 200 ppm to sanitize properly. Standing water observed in bottom of prep top cooler. Removed wet pita bread, do not store food in bottom portion until repaired. Observed standing water in bottom of salad dressing cooler. Eliminate standing water and do not store food on bottom until repaired. Observed dishwashing employee taking out clean dishes with dirty gloves. Employees must use clean gloves when taking out clean dishes. Observed ribs and potatoes in hot box at 118 degrees. All PHF must be kept at 135 degrees or higher. Observed 5 gallon container of chili in walk-in cooler at 90 degrees with lid on. Product two hours old, must reheat to 171 degrees, must cool from 135 to 70 degrees in two hours, then 70-41 degrees in four hours to prevent bacterial growth. Two non-critical violations.
