Recently released inspection reports of Lucas County food-service operations:

Toledo 24, 5424 Telegraph, inspected Nov. 13. Critical violations: Do not store raw bacon above ready-to-eat foods and beverages. Wiping cloths must be stored in sanitizing solution with chemical concentration of 100 ppm chlorine, in bucket or container. Five other non-critical violations. Inspector: Kerry Cutcher.

Kentucky Fried Chicken, 1010 Conant, inspected Nov. 13. Critical violations: All wet wiping rags must be kept in a sanitizer solution in between use. Employees may not eat in kitchen area, only in dining area, and should always wash hands prior to returning to work. Hand sinks must provide a continuous flow of water to facilitate adequate hand washing practices. Hanging stem valves must be removed from hand sinks. This is a repeat violation. Three other non-critical violations. Inspector: Paul Bauman.

Pappoulis Pizza, 5127 Main, Sylvania, inspected Nov. 14. Critical violations: Eggs and other raw animal products must be stored on the bottom shelf in the walk-in cooler to prevent cross-contamination. One non-critical violation. Inspector: Cynthia Garcia.

Gino s, 1280 West Alexis, inspected Nov. 14. Critical violatons: Replace blade on can opener, metal shavings were observed. All items found past the allowed expiration date in the walk-in cooler must be discarded. All potentially hazardous foods (PHF) in cold holding must be maintained at 41 degrees or below. All PHFs must be held at 135 degrees or higher to prevent growth of bacteria. All PHF must cool from 135 to 70 degrees in the first two hours and from 70 to 41 degrees in the following four hours. Los Amigos Family Restaurant, 3236 Stickney, inspected Nov. 15. Critical violations: Employee drinks must have lids to prevent equipment from contamination. There is to be no bare hand contact with ready to eat foods. This is a repeat violation. Tomatoes and lettuce were covered with paper towel, use only food grade products in direct contact with food. All foods must be protected with lids or food grade coverings such as foil or plastic wrap. Facility must have a wiping bucket setup with a chemical concentration of chlorine 100 ppm to properly sanitize surfaces at least every 4 hour and to properly store damp cloths. All PHFs must be held cold at 41 degrees or less or 135 degrees or above to limit bacteria growth. This is a repeat violation. Large container cooling improperly. Cooling must be done rapidly to prevent bacterial growth: two hours from 135-70 degrees and four additional hours to reach 41 degrees. Use shallow uncovered pans in freezer. Four other non-critical violations. Inspector: Cutcher.

Ralphie s, 1406 South Reynolds, inspected Nov. 15. Store all raw animal products below ready-to-eat foods to prevent contamination. Quat in wiping bucket must be at 200 ppm to properly sanitize. Be sure to utilize test strips and switch out sanitizer often. Do not store bottles in ice that is used for drinks. Cheesecake in the reach-in was not date marked and needs to be stored in easily cleanable container that is also non-absorbant. Mayonnaise found at 46 degrees, all PHFs must be held cold at 41 degrees or less. Fourteen other non-critical violations. Inspector: Wilke.
