Original Pancake House, 3310 West Central, inspected Jan. 16. Critical violations: Observed mushroom gravy reheating in the steam table. Food items must be reheated to at least 165 degrees on a direct heat source before being held hot in the steam table. Observed raw sausage stored above cheese and diced tomatoes in the prep top cooler. Raw meats must always be stored below RTE food to prevent cross contamination. Wipe cloth buckets with sanitizer must be set up in each food prep area for sanitizing surfaces throughout the day. Wet wipe cloths must be stored in sanitizer when not in use. A licensed plumber must do the work. Contact city of Toledo building inspection to see if permit is needed. Use prewashed , precut product until air gap is installed. Repeat violation. Beaner s Gourmet Coffee, 2142 North Cove, inspected Jan. 12. Critical violation: Sanitizer was not detected in wipe cloth bucket at time of inspection. Chlorine sanitizer must be kept at a concentration of 50-1100 ppm in wipe cloth buckets. Change water as often as needed to maintain the proper concentration. Two noncritical violations. Cooling must be done rapidly to limit bacteria growth. Food discarded. Observed bottle of lighter fluid above beverages in back area. Store all chemicals below or away from all food and food contact items to prevent chemical contamination. Corrected at time of inspection. Observed uncovered trash receptacle in women s restroom. Observed home-style deep fryer in kitchen. The fryer is not approved and the hood system is not up to code according to the fire inspection. The Library Cafe by Eddy B s, 325 Michigan, inspected Jan. 19. Critical violations: Employee observed putting on gloves before washing hands. To avoid contamination, employees must wash hands before putting on gloves. The person-in-charge at time of inspection was not familiar with safe food handling procedures. The person-in-charge must demonstrate knowledge in safe food handlings. Provide more training or do not leave this person in charge. Improper reheating of food was observed at time of inspection. Cheese was improperly on top of prep top. PHF must be kept in pans that are seated in the prep top cooler. No sanitizer was detected in three-compartment sink.
