Recently released inspection reports of Lucas County food-service operations:
Auntie Anne s Soft Pretzels, 5001 Monroe, inspected May 12. Critical violation: Wipe cloth bucket with the correct concentration of sanitizer must be set up at all times of operation. Food prep surfaces must be periodically sanitized throughout the day. Two noncritical violations. Inspector: Kelly Sattler.
China One Buffet, 4751 Monroe, inspected May 12. Critical violations: Sushi rolls are at 51 degrees on the buffet at time of inspection. The manager stated that sushi is held for no long than two hours. If sushi is to be held based on time instead of temperature, the time sushi was made must be recorded. Also, written procedure must be in place for this. This is a repeat violation. Meat loaf is 123-130 degrees and pizza is 97 degrees on the buffet at time of inspection. All potentially hazardous foods (PHF) must be held hot at 135 degrees or more at all times. The prep top cooler is holding chicken, beef, and shrimp at 43-45 degrees. All PHF must be held at proper temperatures. This is a repeat violation. Garlic in oil is at 60 degrees in the prep top cooler at time of inspection. This PHF must be held cold at 41 degrees or lower at all times. Repeat violation. Chemical dish machine is not dispensing any sanitizer at the time of inspection. Repair immediately. Dishes must be washed, rinsed, then sanitized in the three-compartment sink. No datemarking observed on prepared egg rolls in the walk-in cooler. All refrigerated, RTE, PHF must be properly date marked. Observed cucumbers stored directly below raw meats and chicken in the walk-in cooler. To prevent cross-contamination, raw meats and eggs must be stored below or separate from ready-to-eat foods. Wet wiping towels must be stored in sanitizer solution of proper concentration when not in use. Seven noncritical violations. Inspector: Sattler.
