Omelette mixture is holding at 48 degrees and the ambient air temperature for this cooler is at 45 degrees. All coolers must hold PHF at 41 degrees or lower. This is a repeat violation. If cooler cannot be repaired it must be replaced. High temperature dish machine is not properly sanitizing dishes at time of inspection. The final rinse is not reaching 180 degrees. Repair immediately. Observed wet wiping cloths out on counter. Store wet wiping cloths in sanitizer solution of proper concentration when not in use. Four noncritical violations. Inspector: Sattler.

All PHF held cold must maintain an internal temperature of 41 degrees or less. Raw shell eggs stored above cut potatoes in walk-in cooler. To prevent potential cross contamination, store all raw eggs on the bottom shelf of coolers. Inspector: Paul Bauman.

Southbriar, 5147 Main, Sylvania, inspected June 12. Critical violations: Observed cooked chicken stored under raw beef and pork. Proper storage order: chicken and eggs on bottom, then ground meats, then whole meat and fish and the cooked and ready-to-eat foods on top to prevent cross contamination.
