Dinner Tonight: Wacky Cake

The first cake Janet Jackson, of Temperance, ever made was Wacky Cake, when she was 11. She still makes it today, an untold number of years later. Well, actually, she did tell how many years, but we decided not to pass along the information. Her Aunt Marie taught her the recipe, which she says is great warm with ice cream or whipped topping.

Wacky Cake

1½ cups flour

1 cup sugar

3 tablespoons cocoa

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla

1 tablespoon vinegar

6 tablespoons (3 ounces) oil

Preheat oven to 350°.

In an ungreased, square, 8-inch pan, sift or mix together the flour, sugar, cocoa, and baking soda. Level off the mixture and, using the back of a spoon, make 3 deep indentations. Pour vanilla into one, vinegar into another, and oil into the third. Pour 1 cup cold water over the ingredients and mix well.

Bake 25 minutes.
