Dinner Tonight: Cinnamon Apple Bread

The redoubtable Su Johnson submitted this recipe for Cinnamon Apple Bread, which she says “is very moist.” One ingredient, though, is hard to find: cinnamon baking chips. “ You will find the cinnamon chips by the chocolate chips — when you can find them,” she write. When she does find them, she is sure to stock up on them just for this recipe.

Cinnamon Apple Bread

1 cup oil

3 eggs

1 teaspoon vanilla

2 cups sugar

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

3 teaspoons cinnamon

1 cup chopped nuts

4 cups diced apples

1 cup cinnamon baking chips

Preheat oven to 350°.

Combine oil, eggs, vanilla, and sugar. Set aside. Combine flour, baking soda, salt, and cinnamon. Stir the dry ingredients into the oil mixture. Add nuts, apples, and cinnamon baking chips, and mix thoroughly .

Bake in 2 regular loaf pans or 3 foil loaf pans for 90 minutes. Sprinkle sugar on top, if desired.

Yield: 2-3 loaves
