Dinner Tonight: Avocado Alfredo

When Teresa Stebbins adopted a vegetarian/vegan diet, she began looking for alternatives for her favorite recipes. “This recipe for Avocado Alfredo is not only vegetarian, but it’s a healthier version of Alfredo and we actually prefer it,” she writes. “Everyone I’ve served it to is surprised by the ingredients.” She found this recipe on Pinterest and says it’s easy enough for even novice cooks to make.

Avocado Alfredo

Fettucini

For sauce:

2-3 avocados

1 cup fresh basil leaves

2 tablespoons fresh lemon juice

3-4 garlic cloves

Cook and drain fettucini; set aside. While they cook, prepare sauce. Blend all sauce ingredients together until smooth. Combine with hot noodles and serve immediately. Serves 4.
