Recently released inspection reports of Lucas County food-service operations.

Violations:

Subway, 5821 W. Central, inspected Sept. 3. No sanitizer detected in wipe-cloth bucket. Change out sanitizer in wipe-cloth bucket as often as needed to maintain multi-range quat at 150 to 400 ppm. Inspector: Kelly Sattler.

A Mango Restaurant, 5228 Monroe, inspected Aug. 30. Prep-top cooler by the wok station holding food at temperature of 41 to 45 degrees. Food must be held cold at 41 degrees or lower. Monitor cooler and adjust or repair if needed. Garlic-in-oil mixture sitting out at room temperature at 79 degrees. Garlic-in-oil mixtures are a time/​temperature controlled for safety food and must be held cold under refrigeration at 41 degrees. Inspector: Sattler.

Elephant Bar, 5001 Monroe, inspected Aug. 28. Lobster sauce with prep date of 8/​14/​13 in walk-in cooler. Lobster sauce is made in-house with food and may only be held up to seven days once it is prepared. Manager stated this was an old date sticker and they go through the sauce much quicker than seven days. Always remove date stickers when washing containers and apply new dates to fresh food. Inspector: Sattler.

Chick-Fil-A, 4260 W. Sylvania, inspected Aug. 28. Bulk bin of sanitizer water lacks label and must be labeled. Sanitizer bucket stored on top of cased fryer oil. Store cleaning supplies and chemicals away from or below food and food-contact items. Inspector: Sattler.

Toledo Behavioral, 930 S. Detroit, inspected Sept. 3. Quat sanitizer in buckets low at 100 ppm. Maintain quat sanitizer at 200 ppm. Corrected. Inspector: Gillian Wilke.

Lai Lai Asian Mart, 3205 W. Central, inspected Aug. 21. Preserved duck eggs for sale at room temperature. Label on package says to keep refrigerated. Follow label and keep duck eggs in cooler. Inspector: Kurt Susdorf.

Dorr Street Cafe, 5243 Dorr, inspected Aug. 21. Prep-top cooler on line holding several food items at 50 degrees. Food items must be held at 41 degrees or lower to prevent bacteria growth. Remove food items from cooler and do not use until repaired by licensed repair service. Several dead pests in back storage area by pop syrup boxes holder. Back storage area needs to be cleaned thoroughly and maintained clean to prevent pest attraction. Contact licensed pest company immediately to look at pest problem. Waitress preparing salads with no gloves on. When preparing any ready-to-eat foods such as salads, food handler must wear gloves to prevent cross contamination. Several generic spray chemical bottles with no labels. Generic chemical spray bottles need to be labeled with proper chemical name to prevent chemical contamination. Inspector: Susdorf.

Stop N Shop, 305 Farnsworth, Waterville, inspected Aug. 7. Chlorine and chlorine test strips unavailable. Sanitizer must always be on hand to properly sanitize dishes and equipment, and test strips are needed to test strength of sanitizer water. Obtain both immediately. Inspector: Sara Becker.

Valleywood Golf Club, 13501 Airport, Swanton, inspected Aug. 12. Date marking for seven days must be done correctly on potentially hazardous food, and food must be discarded after the seventh day. Foods in cooler found with eight-day expiration dates, and several items were past the seventh day. Inspector: Becker.

Cheers Sports Eatery, 7131 Orchard Centre, Holland, inspected Aug. 13. Waitress line dressing cooler not holding proper temperature -- holding at about 50 degrees. Manager adjusted the unit down. Food moved into walk-in cooler. Cooler must be able to hold food at 41 degrees and below to slow bacteria growth. Inspector: Becker.

Kangaroo’s, 3410 Briarfield, Maumee, inspected Aug. 15. Foods brought from home for children kept in main cooler. Be sure to go through these items frequently to discard items that have not been used. Food should be brought in daily and returned with children to their home if not used. Food found in the cooler outdated and molded. Inspector: Becker.

Bobby V’s American Grill, 8165 Airport, Holland, inspected Aug. 22. Wet wipe cloths found out on various prep surfaces in the prep kitchen area. Wet wipe cloths must be stored in sanitizer buckets when they are not in use to prevent bacterial growth and subsequent transfer to food surfaces. Inspector: Becker.

Le Petit Gourmet, 6546 Weatherfield, Maumee, inspected Aug. 27. Cross contamination present. Raw chicken kabobs are in storage over raw ground beef on speed racks. Follow proper storage order of food in coolers and freezers to prevent cross contamination. Chlorine sanitizer is not reading in the three-bay sink. Chlorine sanitizer must be at proper concentration at all times of use. Sink was drained and refilled, and chlorine sanitizer was made at the proper concentration. Inspector: Becker.

Spicy Tuna, 7130 Airport, Holland, inspected Sept. 4. Food products must be at least six inches off floor throughout facility to prevent contamination. Food found on floor in the walk-in freezer and cooler. Inspector: Becker.

Cinco de Mayo, 7011 Airport, Holland, inspected Sept. 4. Squirt bottles found throughout the facility with unidentified and unlabeled liquids inside. Squirt bottles must be labeled with contents’ common names to prevent chemical cross contamination. Inspector: Becker.

McDonald’s, 831 W. Alexis, inspected Aug. 29. Employees wearing jewelry. Only a plain wedding band or medical alert bracelet may be worn. Stickers and sticker residue still on containers that have been cleaned. Sticker residue harbors bacteria; therefore, containers are not considered clean until stickers and sticker residue is removed. Sure-shot machine by drive thru at 76 degrees. Food must be at 41 degrees or below to limit bacteria growth. Sprayer on three-bay sink that hangs lower than sink flood level. Sprayer must be at least two inches above flood level of sink to prevent back siphonage. Hand sink not stocked with hand soap. Hand sink must be stocked with warm running water, soap, and hand towels at all times to ensure proper hand washing. Inspector: Stacy Seger.
