Violations:

Original Pancake House, 3310 W. Central, inspected Jan. 9.  

● Food employee(s) did not wash hands in situations that specifically require them to do so.

● A bowl of sausage patties was directly in another bowl of food with no barrier in between to prevent contamination.

● Pancake batter and chilli were not being held at the proper temperature.

● Ice scoop holding container needed cleaning.

● There was an air gap between a plumbing fixture and a piece of equipment that was not sufficient to prevent back siphonage of contaminated water.

● Sanitizing solution did not meet the minimum requirements.

● Hand washing sink is being used for purposes other than hand washing.

● Chilli sauce and ground beef were being improperly reheated.

● There were cracked and broken cambros in use holding food.

● Food debris was stuck on slicers, dicers and produce wedgers on a clean table.

● Cooked chicken, cut cabbage, cheese, pepperoni, taco meat and ham were not properly date marked.

● Person in charge did not ensure that employees are informed in a verifiable manner of their responsibility to report information about their health as it relates to diseases that are transmissible through food.

● There only one wipe cloth bucket in use when there should have a total of three.

● The wipe bucket sanitizer was not at the required concentration.

● The hand washing sink was not easily accessible.

● Shredded chicken, cooked steak, and cooked beans were not being held at the proper temperature.

● Food wasn’t properly separated to prevent contamination – Raw chicken, raw fish and raw pork were on the same shelf ready-to-eat foods and raw shell eggs.

● Bleu cheese, sliced tomatoes, raw patties, raw chicken, and raw fish were not being held at the proper temperature.

● Dishwasher sanitizing solution did not meet the minimum requirements.

● Oven cleaner was leaning on ready-to-eat food.

● Food items were not being held at the proper temperature in the walk-in cooler.

● Sanitizing solution in the dishwashing machine did not meet the minimum requirements.

● The health timer did not engage on the second freezer and a vending machine failed to shut off automatically when the required temperature was not maintained.

● Food was not properly protected from contamination by separation, packaging, and segregation.

● Foods held refrigerated for more than 24 hours were not properly date marked.

● Raw poultry was stored above milk and sausage in a cooler while raw seafood was stored below sausage.
