Strawberry Margarita Chicken Salad

1/2 cup light mayonnaise

juice and zest of 1 lime

4 cups shredded or cubed cooked chicken (such as rotisserie chicken or leftover roasted or grilled chicken)

1 cup halved strawberries

2 stalks celery, chopped

Whisk together the mayonnaise, 1 tablespoon of the lime juice, and 1 teaspoon lime zest in a large bowl. Fold in the chicken, strawberries, and celery. Season to taste with salt and freshly ground black pepper before serving.

Serves 4.
