Apples and Grits Brunch Casserole

2/3 cup uncooked quick grits

2 2/3 cups water

3/4 teaspoon salt

1/4 teaspoon pepper

8 ounces shredded medium cheddar cheese

2 tablespoons margarine

1/4 cup finely chopped onion

1 garlic clove, minced

1 4.5-ounce can chopped green chilies

2 cups diced, peeled apples

2 slightly beaten eggs

Cook grits with water and salt according to package directions, adding pepper. When cooked, add cheese, stirring until completely melted. Remove from heat, stir in margarine, onion, garlic, chilies, and apples. Quickly stir eggs into warm mixture. Pour mixture into shallow 2-quart casserole dish coated with vegetable cooking spray.

Bake at 350 degrees for 50 minutes or until set and golden brown. Cool 10 minutes before serving. Serve hot as brunch side dish.
