2 pounds 93-percent-lean ground beef or buffalo meat
1 bay leaf
2 cups diced green bell peppers
1 15-ounce can red kidney beans, rinsed
2 cups diced onions
2 (14.5 ounces each) diced tomatoes, no salt
1/4 teaspoon paprika
4 cups canned tomato sauce
4 tablespoons chili powder
1 cup water
2 tablespoons ground cumin (or to taste)
Nonstick cooking spray
1 teaspoon ground black pepper
In a large pot, brown ground beef with a small amount of cooking spray; carefully drain off fat. Add remaining ingredients; simmer on medium-low heat for 40 minutes to 1 hour.
