Dinner Tonight: Ham Sandwiches

We were intrigued by the name of these baked sandwiches: Edgington Reunion Ham Sandwiches.

Was Edgington some sort of fancy women's college? Was it an amazingly quaint village in England?

No, it turns out that Edgington is submitter Su Johnson's maiden name. She makes them for family reunions, she said, because they can be assembled hours before serving, and then baked at the last minute, or 15 minutes.

Edgington Reunion Ham Sandwiches

24 Hawaiian rolls, sliced in half

2 pounds shaved ham

1 package baby Swiss cheese (enough for 24 roll-sized sandwiches)

2 stick butter

2 teaspoons poppy seeds

1 teaspoon Worcestershire sauce

2 tablespoons minced onions

1 tablespoon spicy mustard

Put the bottom halves of all 24 rolls in a 9-by-13-inch pan. Cut ham to fit on the rolls, and then cut cheese to fit on the ham. Place the top half of each roll on top of each sandwich. This may be done several hours ahead of time, covered with plastic wrap, and refrigerated.

Preheat oven to 350 degrees. About 20 minutes before serving, melt the butter in a small saucepan and add poppy seeds, Worcestershire sauce, onions, and mustard. Mix well and pour evenly over the sandwiches. Bake for 15 minutes.
