Dinner Tonight: Flank Steak

You know it’s spring when you first start hearing the lawn mowers, when you first begin to smell the scent of meat cooking over hot coals, when pollen starts to accumulate on your car and your windowsills. But let us think of pleasant things, specifically the part about the scent of meat cooking over hot coals or the flames of a gas fire. Gayle Campbell writes in with a couldn’t-be-easier recipe for grilled flank steak. And because you marinate the steak in soy sauce, you don’t even have to salt it first. Just sit back and inhale.

Flank Steak

1 flank steak

½ bottle of soy sauce

1 teaspoon ground thyme

3-4 green onions, chopped

Marinate flank steak in soy sauce, thyme, and green onions for 3 to 4 hours. Prepare a grill for medium-high heat. Grill steak for 7 minutes on each side. Allow to rest 5 minutes, slice thinly across the grain, and serve.
