Dinner Tonight: Garlic Deviled Eggs

Is there anyone who doesn't love deviled eggs? Vegetarians don't, of course, or at least they don't eat them, but deviled eggs are the sort of thing that vegetarians might miss most about eating animal products. At any rate, this very simple version comes to us courtesy of Richard White.

6 hard-boiled eggs

⅓ cup mayonnaise

1/2 teaspoon mustard

2 green onions, chopped

1 garlic clove, minced

Paprika

Slice eggs in half. Remove yolks. In a small bowl, mash yolks with a fork. Add mayonnaise, mustard, green onions, and garlic. Fill egg whites with yolk mixture. Sprinkle with paprika. Refrigerate until served.
