Dinner Tonight: Be-Zu-Tom

9/11/2012

Bowling Green's Mary Weihl has a recipe for ground beef, zucchini, tomatoes, and other good things. She didn't give this particular recipe a name, so we're just going to go ahead and call it Be-Zu-Tom, because, frankly, we're running out of names.

1 1/2 pounds ground beef

2 medium zucchini, diced

1/2 medium onion, chopped

1/2 green pepper, chopped

1 large can tomatoes, chopped

1/2 cup Minute Rice

1 cup tomato juice or less, if needed

1/2 cup cooked corn, optional

In a large skillet over medium high heat, cook beef, stirring often, until brown. Add zucchini, onion, green pepper, and tomatoes. Cook until the vegetables are tender. For the last 10 minutes of cooking, add the rice to thicken the sauce. If the dish is too thick for your taste, add tomato juice to thin it to your desired consistency. Add optional cooked corn, if desired.
