Wauseon's Anne Beck sent in what turns out to be two recipes in one. Meal 1 is just a simple way to cook pork roast in a crock pot. Meal 2 takes leftovers from that meal and turns it into a new experience, invented by a friend of hers from Liberty Center.
Bar-B-Q Sauerkraut
Meal 1:
1 (2½-3 pound) pork roast
2 carrots, cut in half
1 onion, chopped
2-3 potatoes, quartered
Meal 2:
1 (15-ounce) can pineapple tidbits with juice
3 cans sauerkraut rinsed and drained
1 (12-ounce) bottle barbecue sauce
Meal 1: Place all ingredients in a slow cooker. Cook all day.
Meal 2: Shred leftover pork. Place in a slow cooker with pineapple, sauerkraut, and barbecue sauce. Cook all day, or bake in a preheated 350° oven for 1½ hours.
