Dinner Tonight: Theresa's Lazy Day Fruit Salad

Time was passing quickly. Joseph Woodring needed something in a hurry to bring for a potluck meal. Fortunately, he turned to teriskitchen.com, where he found this recipe for a fruit salad that does involve peeling or cutting any fresh fruit. A woman named Theresa Richards submitted it to the Web site.

Theresa’s Lazy Day Fruit Salad

1 large can crushed pineapple, with juice

1 large can fruit cocktail, drained

2 small cans Mandarin oranges, drained

1 small package vanilla instant pudding

1 (8-ounce) container whipped topping

½ cup pecans

½ cup flaked coconut

Stir together pineapple, fruit cocktail, oranges and pudding; mix well. Stir in whipped topping. Pour into deep dish; sprinkle with nuts and coconut. Refrigerate until serving.
