A time-proven and simple pancake recipe

Lynn Webb of Dade City, Fla., shares a pancake recipe she has been making for the last 40 years. It's a family favorite and is sure to become a favorite of many readers. This recipe is so easy to make, and it's economical, too. If you premixed the dry ingredients and kept it in an airtight container you would have an easy breakfast (or dinner) in just a few minutes. The pancakes bake up fluffy and delicious.

Pancakes

2 cups flour

5 teaspoons baking powder

1 teaspoon salt

3 tablespoons sugar

2 eggs

2 cups milk

1/3 cup melted vegetable shortening

Mix flour, baking powder, salt, and sugar in a bowl and set aside. In a large bowl, beat eggs, add milk and mix again. Stir in melted shortening. Add flour mixture all at once and beat until perfectly smooth. Grease and heat a flat griddle to 325°-350°. Pour about ¼ cup batter for each pancake and bake until bubbly. Flip pancake and bake until done. Re-grease griddle after 8 to 10 pancakes.
