A handful of ingredients tossed into a slow cooker in the morning yields a delicious and healthy vegetarian soup for dinner. Teresa Stebbins submitted this easy recipe for Spiced Butternut Lentil Soup; when served with salad and bread, she writes, it makes a complete meal. “This time of year,” she writes, “one of our favorite meals is soup.” If you’re more of a carnivore, feel free to use chicken stock and maybe a nice ham bone.
Spiced Butternut Lentil Soup
1 cup lentils
2½ cups diced butternut squash
½ cup diced carrot
½ cup diced celery
½ cup diced onion
2 garlic cloves, minced
1 teaspoon garam masala
4 cups vegetable broth
Put all ingredients into a slow cooker. Cook for several hours.
