Dinner Tonight: Ground Beef Cabbage Pita Sandwiches

There has to be a better name for this dish than Ground Beef and Cabbage Pita Sandwiches. There simply has to be. It's a sweet-and-sour delight with beef, cabbage (in coleslaw form), and, almost inevitably, bacon. Tom Mockensturm found the recipe years ago in a Pillsbury cooking magazine, and it quickly became one of his son's favorites.

Ground Beef and Cabbage Pita Sandwiches

4 strips bacon

1 pound lean ground beef

1 bag coleslaw mix

1 small onion, minced

3 tablespoons brown sugar

3 Tablespoons apple cider vinegar

Pitas

Chop the bacon into small pieces. In a large skillet over medium-high heat, sauté it and the and the onion until the onion is translucent. Add the ground beef and cook, breaking up the beef with a spatula, until it and the bacon are brown.

Add the slaw mix, the brown sugar, and the vinegar and cook the mixture until the slaw is cooked and tender. Stir and toss regularly as it cooks.

Serve the mixture in pita halves.
