Dinner Tonight: Easy Chicken

A recipe for 1-2-3 Beef published relatively recently in this space reminded Kathy Best of a similar dish made with chicken instead of beef. It is a favorite recipe of her mother’s and is so old, Ms. Best writes, that it predates the use of nonstick oil spray. She calls the recipe “flexible, forgiving, and tasty.”

Easy Chicken

1 cup uncooked rice

1 envelope onion soup mix

1 can cream of mushroom soup

1 can water

1 chicken, cut into serving pieces

Preheat oven to 350º. Spray an average-sized baking pan with nonstick spray. Spread the rice over the bottom of the pan. Add the onion soup mix, mixing it with the rice if you like. Spread the mushroom soup over this, and pour the water on top. Place chicken pieces on top, cover, and bake about 30 minutes. Uncover and bake until chicken is cooked through, adding water if necessary. Cover again if the skin is looking too crispy. Rest a few minutes before serving.
