Dinner Tonight: Tortellini with Ham

Lori Gasser, who submitted this recipe for tortellini with ham, does not recall where the recipe originally came from. But she does write that her two daughters love it. You may, too.

Tortellini with Ham

1 (19-ounce) package frozen cheese tortellini

1½ teaspoons cornstarch

½ cup chicken broth

1 teaspoon dried basil

½ teaspoon dried parsley

¼ teaspoon pepper

3 tablespoons butter

1 cup green (or red) pepper, cut into strips

1¼ cups cubed cooked ham

1 teaspoon minced garlic

4 tablespoons grated Parmesan cheese, divided

Cook tortellini according to directions on package. Meanwhile, combine cornstarch, broth, basil, parsley, and pepper, and set aside.

Heat butter in a large skillet and sauté pepper strips until crisp-tender. Add ham and garlic, and sauté 1 minute longer. Stir in cornstarch-broth mixture. Bring to a simmer and stir 2 minutes until thickened. Add 2 tablespoons cheese.

Drain tortellini, toss with the ham mixture, and sprinkle with the remaining 2 tablespoons cheese.

Yield: 4 servings
