Dinner Tonight: Green Bean Bundles

Suzy Bond likes this recipe for green beans and bacon that is printed in the (really quite impressive) Art Fare cookbook, by the Toledo Museum of Art Ambassadors. It can be prepared a day in advance up to the point where it is baked, and stored in the refrigerator, she writes. Then it should be baked just before it is served.

Green Bean Bundles

1 pound of fresh green beans, trimmed

6 slices of bacon, partially cooked

3 tablespoons light brown sugar

1 tablespoon prepared mustard

Garlic salt to taste

Pepper to taste

Preheat oven to 350°. Grease a baking dish. Parboil or steam the green beans, until tender-crisp, then drain. Gather the beans into 6 bundles, with 7-9 beans per bundle.

Wrap one bacon slice around each bundle. Arrange the bundles in a single layer in the prepared baking dish.

In a small bowl, combine the brown sugar, prepared mustard, garlic salt and pepper, and mix well. Spread over the beans. Bake for 15-20 minutes or until the bacon is cooked through.

Yield: 8 servings
